Wild Rice Salad

I have been making a version of this Wild Rice Salad for a long time. The herbs and lemon make it really fresh and the crunch of the toasted nuts is addictive. It’s the perfect salad for summer BBQs.

Wild Rice Salad

Serves 6

Ingredients

  • 100g basmati rice

  • 200g wild rice

  • 80ml Olive oil

  • Juice and zest of 1 large lemon

  • 1 clove garlic, crushed

  • 100g dried cranberries

  • 60g chopped herbs - mint, chervil and dill

  • 60g pistachios, toasted and crushed

  • 60g flaked almonds, toasted

  • Salt & Pepper

Method

  1. Cook basmati and wild rice as per packet instructions. Once cooked drain, rinse under cold water and drain again.

  2. Combine olive oil, lemon juice and crushed garlic to make dressing.

  3. Combine the two rice with the dressing, lemon zest, dried cranberries and seasoning. Mix well. Season with salt & pepper to taste.

  4. Before serving, add chopped herbs and toasted nuts. Add more oil and/or lemon if too dry.
