Easy Granola

This granola recipe is super easy and versatile. You could swap out the seeds, nuts and dried fruit in the recipe for almost anything else and it would work.

My favourite way to eat this, is with greek yoghurt and a large handful of blueberries.

Easy Granola

Makes approx. 650g

Ingredients

  • 25g unsalted butter

  • 100ml maple syrup

  • 1/4 tsp salt

  • 1 tsp cinnamon

  • 300g oats

  • 30g pumpkin seeds

  • 30g flaked almonds

  • 75g hazelnuts, roughly chopped

  • 100g dried fruit (raisins, cranberries, dates all work well), roughly chopped

Method

  1. Heat oven to 150c

  2. Melt butter. Whisk in maple syrup, salt and cinnamon.

  3. Mix all remaining ingredients, except the dried fruit, in a large bowl. Pour the maple syrup mixture over and toss well.

  4. Spread the granola mixture over 2 large baking trays. Bake for approx. 30 mins, turning every 10 mins. Ready when crunchy and golden.

  5. Cool and mix with fruit.

  6. Store in a jar for approx. 2 weeks.
